Easy to fix, and all the preparation is done the night before. Covered and refrigerated and baked in the morning.

Ingredients

  • 8 slices bacon, cooked until crisp--reserve 1 tbl. drippings
  • 1/2 cup corn flake crumbs
  • 5 - eggs
  • 2-1/2 cup frozen hash brown potatoes
  • 1-1/2 cup (4 oz) shredded swiss cheese
  • 1/2 cup cottage cheese
  • 1/3 cup milk
  • 1 - green onion--- thinly sliced
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 - drops--liquid pepper sauce

How To Make breakfast pie

  • Step 1
    Crumble bacon. Set aside. Mix corn flake crumbs with the 1 Tbl drippings. Set aside.
  • Step 2
    In medium-sized bowl, beat eggs until foamy. Stir in remaining ingredients. Pour into greased 9-inch pie pan. Sprinkle with crumbs mixture and bacon. Cover. Refrigerate overnight.
  • Step 3
    Morning---remove pan from refrigerator. Uncover and bake in oven at 325* about 50 min or until knife inserted near center comes out clean. Great when served with the Save-A-day Coffeecake
