I made this recipe up, looking for something to cook for breakfast.

A slice of this breakfast pie is wonderful for breakfast. But hearty, a slice could be served as a dinner too. It's packed with bacon, sausage, Spam, bell peppers, diced onion, shredded cheese, and eggs inside a flaky, golden brown pie crust. Delish!

Ingredients

  • 2 - Pillsbury pie crust
  • 1 pound bacon
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 can Spam, cubed
  • 6 large eggs
  • 1/3 cup milk, plus more for brushing crust
  • - salt and pepper
  • 6 - links pre-cooked sausage, cut up
  • 1 cup shredded cheddar cheese

How To Make breakfast pie

The height of the pie will be determined based on the size of your pie pan.
  • Cook bacon until crisp.
    Step 1
    Cook bacon until crisp. Then crumble. Set aside. Preheat oven to 350 degrees F.
  • Saute onion, bell pepper, and Spam in the bacon drippings.
    Step 2
    Use part of the bacon drippings saute onion, bell pepper, and Spam.
  • Beat eggs, milk, salt, and pepper.
    Step 3
    Beat eggs, milk, salt, and pepper.
  • Lay the bottom crust in a pie plate and add bacon.
    Step 4
    Lay the bottom crust in the pie pan. Then add crumbled bacon first.
  • Add some of the onion mixture, cheese, egg mixture, and sausage, and then repeat layers.

    Then layer some onion mixture on top of the bacon. Add some cheese. Then, part of the egg mixture. Next, add the sausage. Then repeat until all is in the pan.
  • Add the second pie crust on top, cut slits, and brush with milk.
    Step 6
    Use the second pie crust to lay on top. Cut slits in the top. Brush with milk so it doesn't get too dark.
  • Bake for 1 hour.
    Step 7
    Bake in the oven at 350 degrees for 1 hour.
  • Breakfast Pie ready to be sliced.

    Let it settle for a few minutes before cutting.
