  • 1 pkg
    country mild pork sausage
  • 10
    eggs, lightly beaten
  • 3 c
  • 2 tsp
    dry mustard
  • 1 tsp
  • 6 c
    cubed bread (i use french bread)
  • 2 c
    shredded cheese of choice
  • 1/2 tsp
    black pepper
  • 1/2 c
    thin-sliced green onions
  • 2 Tbsp
    bell pepper of choice, finely chopped
  • ·
    garlic & onion powder to taste
  • ·
    dash of chili powder

How to Make Breakfast/Lunch/Supper Casserole


  1. Preheat oven to 325 degrees and butter 13x9 baking pan or spray with non-stick cooking spray.
  2. Cook sausage over medium-high heat until no longer pink, drain.
  3. In large mixing bowl, combine eggs, milk, mustard, salt, pepper, chili powder, garlic and onion powder; stir well.
  4. Layer in pan in the following order: half the bread, half the cheese, half the sausage and half the onions and bell pepper. Repeat layer using the remaining bread, cheese, sausage, onion and bell pepper.
  5. Pour egg mixture evenly over casserole and bake uncovered for 60 minutes or until eggs are set. If top begings to brown too quickly, tent with foil.
  6. Individual servings can be topped with salsa, white gravy or extra cheese.
