After Thanksgiving, I wanted a good hearty breakfast and we had all this ham leftover...hmmm what to do?? This is what I came up with.

Ingredients

  • 2 - baker size white potatoes
  • 1 cup diced ham chunks
  • 6 - eggs beaten
  • 1/4 cup milk
  • 1/2 cup pepper jack cheese
  • - mrs. dash as needed
  • - salt & black pepper

How To Make breakfast hash

  • Step 1
    Diced potatoes into 1/2 inch chunks. Add oil (your preference) to skillet. season with salt, pepper and Mrs. Dash. fry until just starting to brown and soft. Drain
  • Step 2
    Dice ham into chunks and brown lightly. Break eggs into bowl and add milk. Beat until mixed.
  • Step 3
    Add potatoes to a greased casserole dish, cover with ham, add egg mixture, then grated/crumbled cheese. add seasoning if you wish. Bake at 350 until eggs are firmly set and cheese is starting to brown. It took mine about 45 minutes.
