When my niece and nephew go to stay at Grandma Sandy's house, they ask for several things, this is one of them. Okay, so muffins or cookies would be the other ones...but they always want her to make this breakfast casserole at least one day that they are there.

Ingredients For breakfast casserole, sandy's

  • 2 slice
    bread (sandy uses 3)
  • 1/2 lb
    bulk pork sausage
  • 3
  • 1/2 c
    shredded cheddar
  • 1 c
  • 1/2 tsp
    ground mustard
  • 1/4 tsp
  • 1/8 tsp

How To Make breakfast casserole, sandy's

    Remove crust from bread and cut into 1" cubes. Place bread cubes into a greased 8" square baking dish.

    In a skillet, brown the sausage over a med heat until no longer pink; drain. Sprinkle the sausage and cheese over the bread crumbs.

    In a bowl, whisk the eggs, milk, mustard, salt and pepper. Pour the egg mixture over the sausage and cheese. Bake at 350 degrees for 30 min or until puffed and golden.

    Made in NC 2-25-22 with 15 grain bread, and it was very good. I preferred it to the white bread in the recipe.
