breakfast casserole reduced carbs

My recipe is an adaption of http://www.justapinch.com/recipes/breakfast/breakfast-casserole/green-chile-cheese-squares-4.html?p=2 which is a Blue Ribbon dish I have made that is delicious. I just bumped it up a little with breakfast sausage and rotel.

Ingredients

  • 15 - eggs
  • 1/2 pound low fat breakfast sausage
  • 12 ounces can rotel
  • 1 cup diced green chiles
  • 1 1/2 cups muenster cheese or 2% cheddar

How To Make breakfast casserole reduced carbs

  • Step 1
    Break sausage up and scramble till almost brown. Add 1 can of rotel juice and all and 1/2-1 c chopped green chiles. Simmer till sausage is done, turn off heat and let cool.
  • Step 2
    In a large mixing bowl crack 15 eggs. Add salt and pepper and whisk well (leave off salt for low sodium). Drain juice off of sausage and add to egg, mix well. Add about 1 cup of muenster cheese (or any melting cheese) and mix. Use low fat cheese if desired.
  • Step 3
    Pour into well sprayed 9x11 baking dish. Bake at 375º for about 45 min or till center is solid (use toothpick method to test). Allow to slightly cool, cut and serve.
  • Step 4
    This is a great dish to make ahead and keep in fridge for quick breakfasts or brunches.
