This is a recipe a friend gave to me. If it is a repeat please forgive me. there are so many it is hard to keep track. Enjoy!!!!!!!!!!!!!!!!!!!!!!!!!!!

Serves 4-6
Ingredients
- 1 pound sausage or bacon
- 1/2 package shredded hash browns
- 2/3 cup milk
- 1 large onion, chopped
- 1 medium red bell pepper, chopped
- 6 large eggs plus 2 yolks
- 3 cups cheddar cheese, shredded
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon jalapeno peppers chopped, optional
How To Make breakfast casserole

Step 1Cook Sausage or bacon for a little while then add,onion, and bell pepper, When done drain. Pour frozen hash browns in a greased 13x9 pan, Sprinkle with salt and pepper. Put meat mixture on top of hashbrowns. Beat eggs with 1 tsp. salt and 1/4 tsp. pepper. Add milk and mix. Pour over meat and hashbrowns. Top with grated cheese. Bake at 350 degrees an hour or until knife comes out clean. Serve with salsa if desired.
