This is a recipe a friend gave to me. If it is a repeat please forgive me. there are so many it is hard to keep track. Enjoy!!!!!!!!!!!!!!!!!!!!!!!!!!!

Ingredients

  • 1 pound sausage or bacon
  • 1/2 package shredded hash browns
  • 2/3 cup milk
  • 1 large onion, chopped
  • 1 medium red bell pepper, chopped
  • 6 large eggs plus 2 yolks
  • 3 cups cheddar cheese, shredded
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon jalapeno peppers chopped, optional

How To Make breakfast casserole

  • Step 1
    Cook Sausage or bacon for a little while then add,onion, and bell pepper, When done drain. Pour frozen hash browns in a greased 13x9 pan, Sprinkle with salt and pepper. Put meat mixture on top of hashbrowns. Beat eggs with 1 tsp. salt and 1/4 tsp. pepper. Add milk and mix. Pour over meat and hashbrowns. Top with grated cheese. Bake at 350 degrees an hour or until knife comes out clean. Serve with salsa if desired.
