breakfast casserole

This my Sunday go to when you have a house full of company. You can make it the night before and pop it in the fridge. Orginally the recipe called for bread, but I love the shredded potatoes.

Ingredients
- 12 large eggs, whisked with 1/4 cup milk
- 1 package unfrozen shredded hash brown potatoes
- 1 small onion, diced and sauted in butter
- 1 small green pepper, diced and sauted in butter
- 2 packages 12 oz or larger chedder cheese, shredded
- 1 package 12 oz diced ham
- 1 pound breakfast sausage or any sausage you desire, cooked.
- 1 pound bacon, cooked and crumblesd
How To Make breakfast casserole

Step 1Place hashbrowns on the bottom of a 9x13 sprayed baking dish. Add the meat and onions and peppers.

Step 2Add one package of cheese. Pour egg mixture over casserole.

Step 3Cover with foil. Bake for 45 min at 350. The center of the casserole shoud be puffy and firm. If not return to the oven for a additional 5 or 10 minutes.

Step 4Check doneness by inserting a knife in the center. Cover with the rest of the cheese and return to the oven until cheese melts

Step 5I serve this with gravy and biscuts on the side.
