I made this by accident. I had leftover Roasted Chorizo Potatoes and threw this together. It was a hit :)

Ingredients

  • 1/2 package beef chorizo
  • 5 medium potatoes, peeled & cubed
  • 1/2 small onion, diced
  • 1/2 small green bell pepper, chopped
  • 4 tablespoons olive oil
  • 1 package jimmy dean sausage (i used spicy) cooked & crumbled
  • 2 cups shredded cheddar cheese
  • 12 - eggs, beaten & seasoned with salt & pepper

How To Make breakfast casserole

  • Step 1
    Use leftover Roasted Chorizo Potatoes or prepare potatoes as follows: Pan fry potatoes in olive oil. After browned, add garlic, onion & bell pepper and cook for 1-2 min. Push the potatoes to one side of the pan and add the chorizo with a bit of olive oil and it will melt as it cooks. Stir into the potatoes.
  • Step 2
    Spray a 13x9x2 glass pan with Cooking Spray. Layer the Potatoes, the cooked sausage, top with cheese and then pour the beaten eggs on top. Place pan onto a jelly roll pan or cookie sheet with sides. Place into a 375 oven and pour water onto the jelly roll pan (about 1/2 full).
  • Step 3
    Bake at 375 for about 30 minutes until the egg sets. It's great with salsa and warm tortillas.
