    jimmy dean sausage
  • 2 can(s)

    flour tortillas
  • 3 c
    pepper jack cheese, shredded
  • 6
    large eggs
  • 2 c
  • ·
    salt & pepper
  • ·
    you can add onions, cilantro and green pepper also

How to Make Breakfast Casserole


  1. Cook sausage, drain then add the rotel
  2. In a greased 9x13 casserole, layer 1/2 the tortillas, sausage mixture and cheese then repeat.
  3. Whisk eggs and milk together. Season and pour over the layers in the casserole dish.
  4. Bake uncovered at 350 for 30 minutes (or until the eggs are set)
