Ingredients
- - 4+ slices of bread dunked in beaten eggs
- - 2 medium size potatoes peeled and diced
- - 4 shallots chopped or a small onion
- - 8 oz mild sausage (i.e. jimmy dean)
- - ½ cup chopped bell pepper
- - cheddar cheese
- - 8 eggs beaten and some milk
How To Make breakfast casserole

Step 1Brown shallots, add bell peppers, let cook about 5 min. Add sausage and let it brown. In another pan, brown the potatoes in vegetable oil, keep turning till done. Let cool a little. Meanwhile, beat eggs well and add some milk, salt and pepper. Dunk the bread in the egg. Spray a baking dish with Pam. Place the dunked bread on the greased pan to make a layer. Add the sausage, veggie and potatoes mix into the remaining egg mixture till well blended. Place the egg mixture over the slices of bread to make another layer. The mixture should not be dry. Add more beaten eggs/milk mixture if needed. You can refrigerate overnight, or bake covered in a 350 oven for about 1 hr. Take out upon completion, and add cheese, let stand 5 additional minutes in oven, serve with gravy and biscuits
