Ingredients
- 1 pound frozen hash browns, thawed
- 1 can cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 2 1/4 cups (8 oz) grated cheddar cheese
- 1/4-1/2 cup diced bell peppers
- 1 medium onion, diced
- 1/2 pound thick cut bacon
- 1 package (sleeve) ritz crackers, crushed
- 1 stick plus 2 tbsp melted butter
- dash salt and pepper, to taste
How To Make breakfast casserole

Step 1In a large skillet saute onion and bacon until the bacon is just browned. Remove from heat and set aside.

Step 2In a large mixing bowl combine: soup, sour cream, milk, 1 stick melted butter, 2 cups cheddar cheese, salt and pepper. Mix until blended.

Step 3Add the bacon and onion to the mixing bowl. Mix in the bell peppers and hash browns until evenly combined.

Step 4Place in a greased 13x9 inch baking dish and spread evenly. top with the remaining cheddar cheese and Ritz Crackers. Drizzle the remaining melted butter over the top.

Step 5Bake at 350 degrees for 1 hour or until the top is a nice golden brown. Let cool for about 5 minutes before serving.
