It's a hash brown casserole with a little bit of a twist. Nothing too scary, but just enough to make it perfect for breakfast or for dinner :)

Ingredients

  • 1 pound frozen hash browns, thawed
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 1/4 cups (8 oz) grated cheddar cheese
  • 1/4-1/2 cup diced bell peppers
  • 1 medium onion, diced
  • 1/2 pound thick cut bacon
  • 1 package (sleeve) ritz crackers, crushed
  • 1 stick plus 2 tbsp melted butter
  • dash salt and pepper, to taste

How To Make breakfast casserole

  • Step 1
    In a large skillet saute onion and bacon until the bacon is just browned. Remove from heat and set aside.
  • Step 2
    In a large mixing bowl combine: soup, sour cream, milk, 1 stick melted butter, 2 cups cheddar cheese, salt and pepper. Mix until blended.
  • Step 3
    Add the bacon and onion to the mixing bowl. Mix in the bell peppers and hash browns until evenly combined.
  • Step 4
    Place in a greased 13x9 inch baking dish and spread evenly. top with the remaining cheddar cheese and Ritz Crackers. Drizzle the remaining melted butter over the top.
  • Step 5
    Bake at 350 degrees for 1 hour or until the top is a nice golden brown. Let cool for about 5 minutes before serving.
