Ingredients

  • 1 lb
    ground sausage cooked
  • 3 c
    fresh grated potatoes, pressed
  • 1/4 c
    butter sliced into pats
  • 2 c
    sharp cheddar shredded cheese
  • 16 oz
    small curd cottage cheese
  • 6
    eggs

How to Make Breakfast Casserole

Step-by-Step

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
  2. In the prepared baking dish, stir together the shredded potatoes, spacing the pats of butter on top. Line the bottom and sides of the baking dish with the mixture.
  3. In a bowl, mix the sausage, Cheddar cheese, cottage cheese, and eggs. Pour over the potato mixture.
  4. Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.
