Ingredients
- 1 cup shredded cooked pork shank or roast
- 1 cup summer sausage chopped
- 2 cups chopped multi-colored peppers
- 2 cups sliced mushrooms
- 1 cup chopped onions
- 2 cups shredded sharp cheese
- 4 large eggs
- 1 cup jiffy baking mix
- 2 cups milk (almond, skim, or half and half)
How To Make bountiful brunch casserole

Step 1Pre-heat oven at 400 degrees

Step 2Lightly grease a 9 X 11 glass baking dish.

Step 3Saute onions, peppers, mushrooms in a lightly oiled pan. Add cooked shredded pork and summer sausage and toss and heat through.

Step 4Add mixture to the glass baking dish, spreading ingredients evenly; top with cheese.

Step 5In a medium size mixing bowl, beat the eggs. Wisk in Jiffy baking mix, and milk until well blended.

Step 6Bake for 35 minutes. Garnish with dried parsley and paprika if desired.
