This bountiful casserole is a real man pleaser. Served with a tossed green salad, it also makes a great evening meal. For those who like hot and spicy food, tomato salsa is a great condiment.

Ingredients

  • 1 cup shredded cooked pork shank or roast
  • 1 cup summer sausage chopped
  • 2 cups chopped multi-colored peppers
  • 2 cups sliced mushrooms
  • 1 cup chopped onions
  • 2 cups shredded sharp cheese
  • 4 large eggs
  • 1 cup jiffy baking mix
  • 2 cups milk (almond, skim, or half and half)

How To Make bountiful brunch casserole

  • Step 1
    Pre-heat oven at 400 degrees
  • Step 2
    Lightly grease a 9 X 11 glass baking dish.
  • Step 3
    Saute onions, peppers, mushrooms in a lightly oiled pan. Add cooked shredded pork and summer sausage and toss and heat through.
  • Step 4
    Add mixture to the glass baking dish, spreading ingredients evenly; top with cheese.
  • Step 5
    In a medium size mixing bowl, beat the eggs. Wisk in Jiffy baking mix, and milk until well blended.
  • Step 6
    Bake for 35 minutes. Garnish with dried parsley and paprika if desired.
