Ingredients

  • 2 1/2 cups flour
  • 1 teaspoon each baking powder and baking soda
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 2 large eggs beaten
  • 2 cups buttermilk
  • 1/2 cup whole milk
  • 4 teaspoons melted butter
  • - zest and juice of 1 lemon
  • 2 cups fresh blueberries
  • 1 cup walnuts chopped
  • STREUSEL TOPPING
  • 1/2 cup flour
  • 3 tablespoons brown sugar
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon
  • 4 tablespoons butter cut into chunks
  • - cooking spray

How To Make blueberry pancake bake

  • Step 1
    Mix the flour, baking soda, baking powder, sugar and salt together. Add the eggs buttermilk, milk, melted butter and lemon zest and juice. Mix well. Pour into sprayed 9x13 pan.
  • Step 2
    Top evenly with blueberries. Sprinkle the walnuts over the blueberries.
  • Step 3
    Preheat oven 350 degrees. Mix the dry streusel ingredients together. Cut in the butter with a fork or your fingers. Sprinkle over top of pancake. Bake for 45 to 50 minutes. Serve with or without syrup.
