Ingredients

  • 2 1/2 c
    flour
  • 1 tsp
    each baking powder and baking soda
  • 1/4 c
    sugar
  • 1 tsp
    salt
  • 2 large
    eggs beaten
  • 2 c
    buttermilk
  • 1/2 c
    whole milk
  • 4 tsp
    melted butter
  • ·
    zest and juice of 1 lemon
  • 2 c
    fresh blueberries
  • 1 c
    walnuts chopped
  • STREUSEL TOPPING

  • 1/2 c
    flour
  • 3 Tbsp
    brown sugar
  • 3 Tbsp
    sugar
  • 1 tsp
    cinnamon
  • 4 Tbsp
    butter cut into chunks
  • ·
    cooking spray

How to Make Blueberry Pancake Bake

Step-by-Step

  1. Mix the flour, baking soda, baking powder, sugar and salt together. Add the eggs buttermilk, milk, melted butter and lemon zest and juice. Mix well. Pour into sprayed 9x13 pan.
  2. Top evenly with blueberries. Sprinkle the walnuts over the blueberries.
  3. Preheat oven 350 degrees. Mix the dry streusel ingredients together. Cut in the butter with a fork or your fingers. Sprinkle over top of pancake. Bake for 45 to 50 minutes. Serve with or without syrup.
