Great for company for breakfast since you prepare and refridgerate overnight. It's a real hit with our family. It's also a great bed and breakfast recipe.

Ingredients

  • 12 slices bread cut into one inch cubes
  • 16 ounces cream cheese cut into small cubes
  • 2 cups milk
  • 1/2 cup maple syrup
  • 12 - eggs, beaten
  • 1 cup blueberries, fresh or frozen
  • 1 teaspoon vanilla
  • BLUEBERRY SAUCE
  • 1 cup sugar
  • 1 cup water
  • 1 cup blueberries, fresh or frozen
  • 2 tablespoons cornstarch
  • 1 tablespoon butter

How To Make blueberry french toast casserole

  • Step 1
    Grease 9x13 baking dish. Arrange half of bread in dish. Top with cream cheese. Sprinkle with blueberries, and top with remaining bread.
  • Step 2
    Mix eggs, milk, vanilla and syrup. Pour over casserole and refrigerate overnight. Remove from refrigerator 30 minutes prior to baking.
  • Step 3
    Bake covered for 30 minutes at 350 degrees. Uncover and continue baking 25-30 minutes until center is firm and browned. Serve with blueberry sauce.
  • Step 4
    BLUEBERRY SAUCE Mix sugar, cornstarch and water. Brin to boil. Stir constantly 3-4 minutes. Mix in blueberries. Reduce heat and simmer10 minutes until blueberries burst. Stir in butter.
