Great for company for breakfast since you prepare and refridgerate overnight. It's a real hit with our family. It's also a great bed and breakfast recipe.

Ingredients

  • 12 slice
    bread cut into one inch cubes
  • 16 oz
    cream cheese cut into small cubes
  • 2 c
    milk
  • 1/2 c
    maple syrup
  • 12
    eggs, beaten
  • 1 c
    blueberries, fresh or frozen
  • 1 tsp
    vanilla
  • BLUEBERRY SAUCE

  • 1 c
    sugar
  • 1 c
    water
  • 1 c
    blueberries, fresh or frozen
  • 2 Tbsp
    cornstarch
  • 1 Tbsp
    butter

How to Make Blueberry French Toast Casserole

Step-by-Step

  1. Grease 9x13 baking dish. Arrange half of bread in dish. Top with cream cheese. Sprinkle with blueberries, and top with remaining bread.
  2. Mix eggs, milk, vanilla and syrup. Pour over casserole and refrigerate overnight.

    Remove from refrigerator 30 minutes prior to baking.
  3. Bake covered for 30 minutes at 350 degrees. Uncover and continue baking 25-30 minutes until center is firm and browned. Serve with blueberry sauce.
  4. BLUEBERRY SAUCE

    Mix sugar, cornstarch and water. Brin to boil. Stir constantly 3-4 minutes. Mix in blueberries. Reduce heat and simmer10 minutes until blueberries burst. Stir in butter.
