Great for company for breakfast since you prepare and refridgerate overnight. It's a real hit with our family. It's also a great bed and breakfast recipe.

Ingredients

bread cut into one inch cubes
16 oz
cream cheese cut into small cubes
2 c
milk
1/2 c
maple syrup

eggs, beaten
1 c
blueberries, fresh or frozen
1 tsp
vanilla

BLUEBERRY SAUCE

1 c
sugar
1 c
water
1 c
blueberries, fresh or frozen
2 Tbsp
cornstarch
1 Tbsp
butter

How to Make Blueberry French Toast Casserole

Step-by-Step

  • 1Grease 9x13 baking dish. Arrange half of bread in dish. Top with cream cheese. Sprinkle with blueberries, and top with remaining bread.
  • 2Mix eggs, milk, vanilla and syrup. Pour over casserole and refrigerate overnight.

    Remove from refrigerator 30 minutes prior to baking.
  • 3Bake covered for 30 minutes at 350 degrees. Uncover and continue baking 25-30 minutes until center is firm and browned. Serve with blueberry sauce.
  • 4BLUEBERRY SAUCE

    Mix sugar, cornstarch and water. Brin to boil. Stir constantly 3-4 minutes. Mix in blueberries. Reduce heat and simmer10 minutes until blueberries burst. Stir in butter.
