There are many other versions of this casserole online but I could not understand why you would just use plain cream cheese. I decided to try changing it up a little and mixed the cream cheese with a little sugar and vanilla. When I made it, I used a cookie scoop to drop the cream cheese over the bread cubes. I ended up spreading it out some so there would be a little in each bite. I also added cinnamon and sugar to the custard filling. Hope everyone enjoys it!

Ingredients

  • 1 Loaf italian bread
  • 1 cup blueberries, frozen
  • 2 packages cream cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 12 eggs
  • 2 cups milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 1 cup sugar
  • 1 cup water
  • 1 cup blueberries
  • 1 teaspoon vanilla
  • 2 tablespoons corn starch

How To Make blueberry breakfast casserole

  • Step 1
    Cut Italian loaf into 1 inch cubes. (You can use any type of bread you prefer)
  • Step 2
    Put half of the bread cubes in a 13 x 9 dish. Sprinkle 1 cup of blueberries over the bread. (I like to use frozen blueberries, but fresh are fine too)
  • Step 3
    Mix cream cheese, sugar, and vanilla. Drop by spoonful's over the bread. Put other half of bread crumbs over the cream cheese.
  • Step 4
    Mix eggs, milk, maple syrup, cinnamon, vanilla and sugar and pour over the bread. Cover and put in the refrigerator overnight.
  • Step 5
    Take casserole out of the fridge 30 min before baking. Preheat oven to 350 degrees, cover casserole with foil and bake for 45 minutes. Uncover and cook another 30 minutes. Check doneness by the custard being firm in the middle and lightly browned.
  • Step 6
    While casserole is baking, Mix water, sugar and cornstarch over medium heat until thickened. Add 1 cup of blueberries and cook until they burst, add vanilla after you take it off the heat. Pour over casserole when it is done baking.
