This was a recipe from a potato pancake mix. I don't remember who used the Big Tate name & I haven't been able to find the mix anymore. You can use any potato pancake mix though. I only know that it was Big Tate because the mix was a bigger size. As I don't know how many ounces an envelope contained. If you make this & it doesn't come out right with 1 envelope of mix, try 2 next time as this really was good.

Ingredients For big tate's baked omelet

  • 4-6 slice
    bacon (cooked crisp & cut in pcs. save 2tbs drippings)
  • or 4-6
    links breakfast sausage (cooked, cut in pcs. save 2 tbs drippings
  • 3
    eggs
  • 1 3/4 c
    milk
  • 1 pkg
    potato pancake mix
  • paprika, sweet mild or smoked
  • maple syrup

How To Make big tate's baked omelet

    Cook bacon or sausage & cut up.
  • 2
    Mix all ingredients together including drippings, but not paprika & syrup.

    Pour into a greased casserole dish & bake 20-25 min. at 350 F. until firm. Scoop out & sprinkle with paprika or pour on some syrup & serve.
