4-6 slicebacon (cooked crisp & cut in pcs. save 2tbs drippings)

or 4-6links breakfast sausage (cooked, cut in pcs. save 2 tbs drippings
-
3eggs
-
1 3/4 cmilk
-
1 pkgpotato pancake mix
-
·paprika, sweet mild or smoked

·maple syrup
How to Make Big Tate's Baked Omelet
- Cook bacon or sausage & cut up.
- Mix all ingredients together including drippings, but not paprika & syrup.
- Pour into a greased casserole dish & bake 20-25 min. at 350 F. until firm. Scoop out & sprinkle with paprika or pour on some syrup & serve.
