Be sure to use a day-old baguette. If using a fresh one, try cutting the cubes and putting them on a baking sheet in a 250 degree oven for a few minutes to dry the bread out. Otherwise, the french toast will be soggy.

  • 1 day old baguette, 8 oz
  • 1 tablespoon unsalted butter
  • 1 large very ripe banana
  • 1 cup milk
  • 3 large eggs
  • 3 large egg whites
  • 3 tablespoons real maple syrup
  • 1 teaspoon vanilla
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon kosher salt
  • 10 ounces package frozen mixed berries
  • 1/2 cup walnuts, chopped
  • 3 tablespoons brown sugar
  • 3 tablespoons cold unsalted butter, cubed

How To Make berrylicious overnight french toast

  • Step 1
    Use the butter to grease a 9x13 baking dish. Spread the bread cubes evenly in the dish.
  • Step 2
    In a large bowl, mash the ripe banana with a fork until smooth. Whisk in the milk, eggs, egg whites, maple syrup, vanilla, cinnamon, and salt. Pour the mixture over the bread cubes, tossing gently to coat.
  • Step 3
    Sprinkle berries over the bread mixture. Cover the dish with plastic wrap and chill for at least 8 hours, preferably overnight.

    Heat oven to 375 degrees. Combine the walnuts and brown sugar in a bowl. Add the butter, and using your fingers, mix until crumbly. Sprinkle this mixture evenly over the chilled bread mix.
  • Step 5
    Cover the baking dish with foil and bake until set, about 30 minutes. Remove the foil and bake until the top is golden brown, about another 10 minutes. Let stand at room temperature for at least 10 minutes before serving.
