Ingredients

1 lb
fresh or smoked link sausage, cut into 3/4 inch pieces
2 large
sweet potatoes, cut into 3/4 inch cubes
1 large
onion, chopped into 1/2 inch pieces
1 large
green bell pepper, chopped into 1/2 inch pieces
8 oz
cremini mushrooms or white button, halved or grated
1 tsp
dried thyme leaves
1/2 tsp
dried or rubbed sage leaves
salt and pepper, to taste
olive or other vegetable oil

How to Make Baked Sausage And Sweet Potatoes

Step-by-Step

  • 1preheat oven to 400. combine all ingredients in a baking pan sprayed with cooking spray, adding just enough olive oil to the mixture to coat slightly.
  • 2toss well. cover tightly and bake for 30 minutes. remove cover and continue to bake until sausage is cooked through and the vegetables are tender, about 30 minutes.
  • 3serve immediately, or tent with oil and keep warm for up to 20 minutes.
