this is another great dish to have for breakfast but we have it any time of the day

Ingredients

  • 1 pound fresh or smoked link sausage, cut into 3/4 inch pieces
  • 2 large sweet potatoes, cut into 3/4 inch cubes
  • 1 large onion, chopped into 1/2 inch pieces
  • 1 large green bell pepper, chopped into 1/2 inch pieces
  • 8 ounces cremini mushrooms or white button, halved or grated
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon dried or rubbed sage leaves
  • - salt and pepper, to taste
  • - olive or other vegetable oil

How To Make baked sausage and sweet potatoes

  • Step 1
    preheat oven to 400. combine all ingredients in a baking pan sprayed with cooking spray, adding just enough olive oil to the mixture to coat slightly.
  • Step 2
    toss well. cover tightly and bake for 30 minutes. remove cover and continue to bake until sausage is cooked through and the vegetables are tender, about 30 minutes.
  • Step 3
    serve immediately, or tent with oil and keep warm for up to 20 minutes.
