Baked Sausage And Sweet Potatoes

this is another great dish to have for breakfast but we have it any time of the day

1 lb
fresh or smoked link sausage, cut into 3/4 inch pieces
2 large
sweet potatoes, cut into 3/4 inch cubes
1 large
onion, chopped into 1/2 inch pieces
1 large
green bell pepper, chopped into 1/2 inch pieces
8 oz
cremini mushrooms or white button, halved or grated
1 tsp
dried thyme leaves
1/2 tsp
dried or rubbed sage leaves
salt and pepper, to taste
olive or other vegetable oil


1preheat oven to 400. combine all ingredients in a baking pan sprayed with cooking spray, adding just enough olive oil to the mixture to coat slightly.
2toss well. cover tightly and bake for 30 minutes. remove cover and continue to bake until sausage is cooked through and the vegetables are tender, about 30 minutes.
3serve immediately, or tent with oil and keep warm for up to 20 minutes.
