Baked Puffed Pancake Cassarole
Makes a great holiday breakfast with the addition of thinly sliced apples layered on top, sprinkled w/cinnimon, walnuts & brown sugar. I like to serve this with a side of sweet dijon bacon & will post a recipe for that later.
How to Make Baked Puffed Pancake Cassarole
- Preheat oven to 450' Melt butter in 9x13 inch baking dish in the oven.
- Combine remaining ingredients and pour into baking dish. Bake for 25-30 minutes or until top pops up.
- Serve warm w/butter and syrup
- This is a very flexible recipe and can be made according to your liking. Can be prepared sweetened or unsweetened. During summer I like to add fresh blueberries to the batter and top w/blueberry puree.
Recipe can easily be cut in half.
