Ingredients
- 8 - lg eggs
- 6 slices bacon
- 1 - onion, chopped
- 10 - potatoes, new red
- 1 cup cheese, shredded
- 1 tablespoon shortening
- 1 teaspoon chili powder
- 1 teaspoon seasoning salt
How To Make bacon frittata-kl

Step 1Add potatoes and a dash of salt to 4 qts water and heat to boiling. Cover and cook until potatoes skins split, about 20 min. Drain and set aside to cool.

Step 2Preheat oven to 375 F.

Step 3Rub shortening on sides and bottom of 13x9 pan.

Step 4Chop onion.

Step 5Cut bacon into small pieces.

Step 6Cook bacon until crisp. Remove and set aside.

Step 7Cook onion in bacon grease until soft. Remove and set aside.

Step 8Chop potatoes into small chunks or shred.

Step 9Place in bottom of a 13x9 pan.

Step 10Sprinkle 3/4 of the bacon on top of the potatoes.

Step 11Beat eggs with the chili powder and seasoning salt. Pour over potatoes and bacon, mixing to coat.

Step 12Sprinkle with the cheese and top with the remaining bacon.

Step 13Bake for 35 minutes or until eggs are done and cheese is bubbly.
