Thanks to Melissa S. I have a new obsession. Cooking eggs, and whatever my mind can conjure up, in muffin tins. So easy, fun and delicious.

How to Make Bacon & eggs to go

Step-by-Step

  1. If using bacon that shrinks, you will need to figure about 1 1/2 slices each instead of one. So 9 would be enough. Place bacon on baking sheet and bake 375° for approx. 20-25 min. Keep an eye on it, you want to remove it before it is completely cooked so you can "bend" it.
  2. Crack eggs into med bowl, whisk well, add salt and pepper is desired. Add DRAINED rotel and cheese and mix together well.
  3. Spray large muffin tin cups (6) with non stick spray oil. As soon as bacon comes out of oven, curl it around inside of muffin tins.
  4. Using a 1/2 c measuring cup, scoop and pour egg mixture into inside of bacon wrapped muffin tin. Bake at 425° for about 15 min. or till center is firm.
  5. You can serve these as is, or put them on a biscuit or dinner roll. They are a great "breakfast on the go" treat that is utterly delicious.
  6. Here are a few links to other ways to use your muffin tin to cook eggs.
