  • 4 c
    frozen hashbrown potatoes, thawed
  • 1/2 c
    chopped frozen onions / divided
  • 1/2 c
    melted butter
  • 1 pkg
    16oz small curd cottage cheese
  • 2 c
    shredded cheddar cheese
  • 1 1/2 c
    bacon bits or crumbled crisp bacon
  • 8
    large eggs/beaten

How to Make Bacon breakfast casserole


  1. preheat oven to 375
  2. mix potatoes, melted butter and 1/2 the onions in a 9x13 pan . Press the potatoes firmly to bottom and sides of pan. Bake 30 minutes until golden brown
  3. mix together beaten eggs, cottage cheese,shredded cheese, onion and bacon. Fill potato "shell" spreading evenly. Bake an additional 30 minutes or until knife inserted in center comes out clean. Cool 5 minutes before serving
