Ingredients
- 4 cups frozen hashbrown potatoes, thawed
- 1/2 cup chopped frozen onions / divided
- 1/2 cup melted butter
- 1 package 16oz small curd cottage cheese
- 2 cups shredded cheddar cheese
- 1 1/2 cups bacon bits or crumbled crisp bacon
- 8 - large eggs/beaten
How To Make bacon breakfast casserole

Step 1preheat oven to 375

Step 2mix potatoes, melted butter and 1/2 the onions in a 9x13 pan . Press the potatoes firmly to bottom and sides of pan. Bake 30 minutes until golden brown

Step 3mix together beaten eggs, cottage cheese,shredded cheese, onion and bacon. Fill potato "shell" spreading evenly. Bake an additional 30 minutes or until knife inserted in center comes out clean. Cool 5 minutes before serving
