My sister makes this every time we go to visit her in Pennsylvania. I don't know one family member who doesn't like it. Some of our best breakfasts were spent out on her deck in the summer, in our PJs well into the afternoon, telling stories, laughing, and munching on this with our coffee. Try it! I'm positive you and your loved ones will love it!

Blue Ribbon Recipe

This breakfast recipe would be perfect for a holiday brunch or weekend breakfast. It has a fancy feel, but it's easy to make. Once baked, the puff pastry is flaky. Inside are layers of bell pepper, diced ham, cheddar cheese, and a creamy mixture of eggs, spinach, and ricotta cheese. It's salty, savory, and hearty. If there is leftover holiday ham, this is a delicious way to reinvent it.

Ingredients

  • 1 package frozen puff pastry, thawed (17.3 oz)
  • 6 large eggs
  • 15 ounces ricotta cheese
  • 4 - 6 slices ham, cubed
  • 1 1/2 cups grated extra sharp cheddar cheese
  • 1 package spinach, thawed and well drained (10 oz)
  • 1 cup diced red pepper
  • 5 dashes hot sauce

How To Make aunt jodi's breakfast extravaganza

  • Roll out two pieces of puff pastry.
    Step 1
    Preheat oven to 425 degrees F. Roll out pastry - one to 11" and one to 12" (leave square).
  • Grease a springform pan and place one piece of puff pastry inside.
    Step 2
    Grease a springform pan, and place the 12-inch pastry in the bottom of the pan and up the sides; set aside.
  • Beat eggs removing 1 Tbsp.
    Step 3
    In a bowl, beat eggs. Put aside 1 Tbsp for later.
  • Add ricotta cheese, hot sauce, and spinach to the eggs.

  • Add spinach mixture to the pan.

    Add the spinach ricotta mixture to the pastry-lined pan.
  • Add the cheddar cheese.

  • Place second piece of puff pastry on top and crimp the edges.

  • Cut 5 - 6 slits to vent the filling.
