Easy and delicious! My girlfriends often request this when it's my turn to bring breakfast.
Blue Ribbon Recipe
We love puff pancakes in the Test Kitchen and really loved them with Lilli's addition of apples, raisins, and nuts. It brings this pancake to another level. Nuts added a crunchy texture that complemented the sweet and tart apples and raisins. Make this deliciously easy recipe for your next breakfast or brunch and impress your family.
Heat oven to 400 degrees. Melt the butter in a 9x13-inch baking dish in the oven as it's preheating; swirl butter around to coat dish completely.
Whisk together the eggs, milk, vanilla, and flour. Sprinkle brown sugar and cinnamon over the melted butter.
Combine apples, raisins, and walnuts. Lay the apple slices down over the butter.
Pour the flour mixture over the apple slices and bake for about 30-35 minutes or until cooked through. Serve with maple syrup if desired.
