The first time I made this for my kids, I did not tell them there was cottage cheese in it, they loved it! Now of course they know and they ask me to make for a weekend breakfast! Recipe Source~ tasteofhome.com

Ingredients

  • 1 pound sliced bacon, diced
  • 1 medium sweet onion, chopped
  • 6 - eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups cottage cheese
  • 1 1/4 cups shredded swiss cheese

How To Make amish breakfast casserole

  • Step 1
    Preheat oven to 350*. Cook bacon until crisp (I used the oven method). Drain and dice. Combine chopped onion, eggs, hash browns, shredded cheddar, cottage cheese and shredded swiss cheese in large mixing bowl. Stir in bacon.
  • Step 2
    Transfer into a 13x9-inch baking dish, greased. I line dish with aluminum foil and then spray for easy cleanup.
  • Step 3
    Bake in preheated oven for 35 to 40 minutes or when knife inserted in center comes out clean. Let stand for 10 minutes and serve. 7 points per serving
