Ingredients
- 1 pound sliced bacon, diced
- 1 medium sweet onion, chopped
- 6 - eggs, lightly beaten
- 4 cups frozen shredded hash brown potatoes, thawed
- 2 cups shredded cheddar cheese
- 1 1/2 cups cottage cheese
- 1 1/4 cups shredded swiss cheese
How To Make amish breakfast casserole

Step 1Preheat oven to 350*. Cook bacon until crisp (I used the oven method). Drain and dice. Combine chopped onion, eggs, hash browns, shredded cheddar, cottage cheese and shredded swiss cheese in large mixing bowl. Stir in bacon.

Step 2Transfer into a 13x9-inch baking dish, greased. I line dish with aluminum foil and then spray for easy cleanup.

Step 3Bake in preheated oven for 35 to 40 minutes or when knife inserted in center comes out clean. Let stand for 10 minutes and serve. 7 points per serving
