This is a wonderful casserole that can be made for breakfast or a brunch and you can double this recipe very easily for a big morning holiday breakfast with the family

Ingredients

  • 1 lb
    sliced bacon, diced
  • 1 medium
    sweet onion, chopped
  • 6
    eggs, lightly beaten
  • 4 c
    frozen shredded hash brown potatoes, thawed
  • 2 c
    shredded cheddar cheese
  • 1 1/2 c
    4% cottage cheese
  • 1 1/4 c
    shredded swiss cheese

How to Make Amish Breakfast Casserole

Step-by-Step

  1. In a large skillet, cook bacon and onion until bacon is crisp, drain.
  2. In a large bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9 baking dish.
  3. Bake, uncovered, at 350 for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before serving.
