Ingredients
- 1 - uncooked pastry case / crust
- 1 teaspoon butter
- 3 small zucchini trimmed and finely sliced
- 1/2 cup cheddar cheese, grated
- 1/2 cup cottage cheese
- 3 tablespoons chopped fresh parsley
- 6 - fresh basil leaves, chopped
- 3/4 cup milk
- 3 - eggs, separated
How To Make zucchini quiche

Step 1Serves 6

Step 2Preheat oven to 375 F. Make pastry case as directed.

Step 3Melt butter in a frying pan and lightly fry zucchini. Place zucchini in base of pastry case.

Step 4Combine cheeses, herbs, milk and egg yolks in a bowl, mix well.

Step 5Mix egg whites stiffly, fold into cheese mixture.

Step 6Hold a spoon upside down in the base of the pastry case. Pour cheese mixture over zucchini, remove spoon.

Step 7Bake in oven for 10 minutes the reduce temperature to 350 F and cook for a further 30 minutes.
