    uncooked pastry case / crust
  • 1 tsp
  • 3 small
    zucchini trimmed and finely sliced
  • 1/2 c
    cheddar cheese, grated
  • 1/2 c
    cottage cheese
  • 3 Tbsp
    chopped fresh parsley
  • 6
    fresh basil leaves, chopped
  • 3/4 c
  • 3
    eggs, separated

How to Make Zucchini Quiche


  1. Serves 6
  2. Preheat oven to 375 F. Make pastry case as directed.
  3. Melt butter in a frying pan and lightly fry zucchini. Place zucchini in base of pastry case.
  4. Combine cheeses, herbs, milk and egg yolks in a bowl, mix well.
  5. Mix egg whites stiffly, fold into cheese mixture.
  6. Hold a spoon upside down in the base of the pastry case. Pour cheese mixture over zucchini, remove spoon.
  7. Bake in oven for 10 minutes the reduce temperature to 350 F and cook for a further 30 minutes.
