This recipe is from recipelion.com/...Zucchini-Quiche-2. Because its title is identical with another Zucchini Quiche recipe I had previously pinched, the browser Pinch app wouldn't work for this one, so I have transcribed it here.

uncooked pastry case / crust
1 tsp
butter
3 small
zucchini trimmed and finely sliced
1/2 c
cheddar cheese, grated
1/2 c
cottage cheese
3 Tbsp
chopped fresh parsley
6
fresh basil leaves, chopped
3/4 c
milk
3
eggs, separated

How to Make Zucchini Quiche

Step-by-Step

  • 1Serves 6
  • 2Preheat oven to 375 F. Make pastry case as directed.
  • 3Melt butter in a frying pan and lightly fry zucchini. Place zucchini in base of pastry case.
  • 4Combine cheeses, herbs, milk and egg yolks in a bowl, mix well.
  • 5Mix egg whites stiffly, fold into cheese mixture.
  • 6Hold a spoon upside down in the base of the pastry case. Pour cheese mixture over zucchini, remove spoon.
  • 7Bake in oven for 10 minutes the reduce temperature to 350 F and cook for a further 30 minutes.
