Ingredients

whole wheat bread
2 oz
cheddar, swiss, or mozzarella cheese
1 c
broccoli florets
1/2
small red pepper
4
eggs
3/4 c
evaporated fat free milk
1/4 tsp
thyme
1/8 tsp
salt
1/8 tsp
pepper

Step-By-Step

1Preheat oven to 375
Layer tortilla's in baking dish
sprinkle with cheese
2In a small cook the broccoli and peppers in bowling water until crisp tender.
drain well and layer on top of the cheese
3In a small bowl, combine the eggs, milk and spices until well mixed.
Pour egg mixture over the broccoli
Bake for 25-30 minutes until puffed and a knife inserted comes out clean.
