~ sourdough - ham, egg & swiss bake ~ my way

I had some sourdough bread I needed to use, some ham cubes, roasted red peppers and scallions. Add some Swiss cheese and eggs and this is what I ended up with. What a wonderful flavor, my family loved it! I hope you enjoy this yummy breakfast as much as we did. Enjoy!

Ingredients

  • 2 slices sour dough bread / cubed and toasted ( about 1 cup )
  • 6 - eggs
  • 1 1/2 tablespoons dijon mustard
  • kosher - salt & pepper to taste
  • about - 4 ounces sweet red peppers ( fire roasted ) chopped - they come in a jar
  • about - 1 1/2 cup shredded swiss cheese - divided
  • 3 1/2 - 4 ounces cubed, pre cooked ham
  • 3 - scallions, thin sliced - divided

How To Make ~ sourdough - ham, egg & swiss bake ~ my way

  • Step 1
    Preheat oven to 350 degree F. Spray an 8 inch casserole dish with nonstick cooking spray. Set aside. Bake sour dough cubes until toasty. In a medium sized bowl, whisk together eggs, salt, pepper and mustard.
  • Step 2
    Add the toasted sour dough cubes, 1/2 the peppers, 3/4 cup cheese, ham and 1/2 scallions. Mix well.
  • Step 3
    Pour into prepared baking dish. Top with remaining scallions, roasted red peppers and cheese.
  • Step 4
    Bake for roughly 25 minutes or until set.
  • Step 5
    Turn oven to broil and bake an additional few minuted or until golden.
  • Step 6
    Remove from oven and slice into desired servings. Top with sour cream and scallions. Delicious!
