~ sourdough - ham, egg & swiss bake ~ my way
I had some sourdough bread I needed to use, some ham cubes, roasted red peppers and scallions. Add some Swiss cheese and eggs and this is what I ended up with. What a wonderful flavor, my family loved it! I hope you enjoy this yummy breakfast as much as we did. Enjoy!

Ingredients
- 2 slices sour dough bread / cubed and toasted ( about 1 cup )
- 6 - eggs
- 1 1/2 tablespoons dijon mustard
- kosher - salt & pepper to taste
- about - 4 ounces sweet red peppers ( fire roasted ) chopped - they come in a jar
- about - 1 1/2 cup shredded swiss cheese - divided
- 3 1/2 - 4 ounces cubed, pre cooked ham
- 3 - scallions, thin sliced - divided
How To Make ~ sourdough - ham, egg & swiss bake ~ my way

Step 1Preheat oven to 350 degree F. Spray an 8 inch casserole dish with nonstick cooking spray. Set aside. Bake sour dough cubes until toasty. In a medium sized bowl, whisk together eggs, salt, pepper and mustard.

Step 2Add the toasted sour dough cubes, 1/2 the peppers, 3/4 cup cheese, ham and 1/2 scallions. Mix well.

Step 3Pour into prepared baking dish. Top with remaining scallions, roasted red peppers and cheese.

Step 4Bake for roughly 25 minutes or until set.

Step 5Turn oven to broil and bake an additional few minuted or until golden.

Step 6Remove from oven and slice into desired servings. Top with sour cream and scallions. Delicious!
