  • 1 3/4 c
    ritz crackers, crushed
  • 1/2 c
    butter, melted and divided
  • 1/4 c
    onion, chopped
  • 1/2 c
    green bell pepper, finely diced (or color of your choice)
  • 1 can(s)
    15-oz. can cream-style corn
  • 1/4 c
    all-purpose flour
  • 2
    eggs, beaten
  • 1/4 c
    milk (or cream)
  • 1/2 tsp
  • 1/4 tsp
    curry powder
  • 5-8 slice
    bacon, cooked and crumbled

How to Make Ritzy Corn Pie


  1. Heat oven to 350 degrees F.
  2. Combine crushed crackers with 1/3 of melted butter. Press crumbs into a 9-inch quiche dish.
  3. Cook onions and pepper in remaining butter until tender. Add corn and flour. Cook, stirring until thick.
  4. Combine eggs, milk, salt and curry powder. Stir rapidly into corn mixture. Add bacon. Pour into quiche dish. Bake 30 minutes or until golden. Serve immediately.
