redneck breakfast casserole

I woke up one morning and wanted something different for breakfast. This was the result. It's eggy, cheesy, meaty, crunchy and delicious! I created the recipe for an 8x8 casserole, but you may double it and use a 9x13 dish (be sure to increase baking time to 50 minutes.) You may assemble it the night before, if desired, just reserve the potato sticks topping until ready to bake.

Ingredients

  • 1 tablespoon butter, softened
  • 4 slices hearty white bread, torn into bite-size pieces
  • 3/4 cup fried shoestring potatoes, divided 1/4 cup & 1/2 cup
  • 1/2 cup chopped sliced ham (2 or 3 slices) or 1 cup cooked and crumble pork breakfast sausage
  • 1/2 cup grated whole milk mozzarella cheese
  • 1/2 cup grated sharp cheddar cheese
  • 1 cup whole milk
  • 4 large eggs
  • 1/2 tablespoon finely minced onion or chives
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 to 1/2 teaspoon salt

How To Make redneck breakfast casserole

  • Step 1
    Place oven rack in middle position and preheat oven to 350º F.
  • Step 2
    Grease an 8"x8" casserole dish with 1/2 tablespoon butter.
  • Step 3
    Evenly distribute torn bread in the dish.
  • Step 4
    Sprinkle with 1/3 cup potato sticks.
  • Step 5
    Evenly distribute ham on top of potato sticks.
  • Step 6
    Sprinkle with cheeses.
  • Step 7
    In a medium bowl, whisk together, milk, eggs, onions or chives, pepper and salt until thoroughly combined.
  • Step 8
    Pour evenly over ingredients in dish.
  • Step 9
    Top with 1/2 cup potato sticks.
  • Step 10
    Bake, uncovered, at 350º F for 35-40 minutes.
  • Step 11
    Serve immediately.
