Ingredients

  • 3 cups old fashioned oatmeal
  • 1 cup canned solid pumpkin -like libby's
  • 3/4 cup light brown sugar,packed
  • 2 teaspoons baking powder
  • 1 teaspoon each ground cinnamon, and salt
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1/2 cup melted unsalted butter
  • TOPPING:
  • 1/2 cup chopped pecans
  • 3 tablespoons soft butter
  • 1/2 cup light brown sugar,packed

How To Make pumpkin praline baked oatmeal

  • Step 1
    Preheat oven to 350^. In a large bowl, stir the oats, pumpkin, brown sugar, baking powder, slat cinnamon, nutmeg and cloves. Mix well. Set aside.
  • Step 2
    In another bowl, whisk together the vanilla, eggs, milk and melted butter. Stir into the dry ingredients until well blended. In a small bowl combine the topping ingredients. Set aside.
  • Step 3
    Pour the pumpkin batter into a 9-inch casserole dish coated with non stick butter spray and sprinkle the pecan mixture over top. Bake for 35 to 40 minutes or until just set. Serve right away. Great with cream or whipped cream too.
