potato pancake breakfast sliders
I found this recipe in an old recipe book from a bunch I found at a garage sale; upon looking at one of them; this recipe, written on a card, fell out of the book, it had no name; so I named it!! They are really good and different... give them a try!

Ingredients
- 1 package 4 oz. cream cheese
- 1 - egg
- - a little onion
- 2 cups grated potatoes, (2 large)
- 2/3 cup swiss cheese, shredded
- 8 - small ham patties, or diced ham
How To Make potato pancake breakfast sliders

Step 1Squeeze the grated potatoes in a towel until all of the water is extracted. Add to the creamed cheese and egg mixture, add cheese and onion.

Step 2Fry on a greased griddle (makes about 8 patties)

Step 3Heat ham on top of the patties, meanwhile poach 8 eggs. Put on top of the ham and potato patties... Enjoy!
