I made up this recipe because I had leftover orange Danish rolls from a tube and forgot about them for about 10 days. This recipe can be played with and used with any type of leftover sweet rolls. Make sure rolls are at least 1 week old and keep frosting on. My husband likes it with a little syrup over it. Serve with fresh fruit it makes a great brunch.

This breakfast bake is an easy breakfast and a great way to use leftover sweet rolls. It uses orange cinnamon rolls that add a sweet flavor to the side dish. Crumbled bacon adds a wonderful savory touch that balances out the sweet rolls. Drizzle with maple syrup for a delicious breakfast treat.

Ingredients

  • 4 - day old orange sweet rolls
  • 4 - 6 slices bacon
  • 1/4 cup onions (optional)
  • 1 1/2 cups shredded cheese
  • 3/4 cup milk
  • 3 - 4 large eggs

This makes a small side dish. Double the recipe to make a 9x13 casserole.
  • Bake and frost orange rolls.
    Step 1
    Bake the orange rolls according to the package directions. Frost and let cool. Cover and save for the next day.
  • Fry bacon.
    Step 2
    Preheat the oven to 325 degrees F. Fry the bacon in a pan or cook in the microwave until crisp.
  • Saute onions.
    Step 3
    If using onions, saute for 3 - 5 minutes until translucent.
  • Cube the rolls and place in a 5x9 baking dish.
    Step 4
    Cube the sweet rolls with frosting. Put in a 5x9 pan sprayed with butter-flavored cooking spray.
  • Sprinkle half the cheese over the rolls.
    Step 5
    Sprinkle half of the shredded cheese over the cubed rolls.
  • Combine milk, eggs, and onions.
    Step 6
    Combine milk, eggs, and onions (if using).
  • Pour the milk mixture over the rolls.
    Step 7
    Pour the milk mixture over the cheese and cubed rolls.
  • Cover the baking dish with foil and bake.
    Step 8
    Bake, covered with foil, for 45 - 50 minutes.
  • Sprinkle with remaining cheese and bacon.
    Step 9
    Remove the casserole from the oven. Sprinkle with the remaining cheese and the bacon.
  • Return to the oven and bake until the cheese is melted.
    Step 10
    Return to the oven. Bake for 5 more minutes until the cheese is melted.
  • Let the casserole rest for 10 minutes.
    Step 11
    Let rest for 10 minutes. Can be served with syrup.
