We love breakfast bowls. They're versatile and a hearty breakfast everyone loves. Country-style potatoes are the base for this bowl. Pan-fried until crispy and golden brown, they have diced onions and Anaheim peppers for a little spice. Buttery scrambled eggs, creamy country sausage gravy, and shredded cheese round out the bowl. While easy to make, this takes a little time to prepare the ingredients. So, this is a great Saturday or Sunday morning breakfast idea.

Ingredients

  • 1 pound breakfast sausage
  • 3 tablespoons olive oil
  • 6 large potatoes, diced small
  • 1 large Anaheim pepper, sliced small
  • 1 medium onion, diced
  • 6 large eggs, lightly beaten
  • 1/2 cup milk
  • 2 tablespoons melted butter
  • dash paprika, to taste
  • salt, to taste
  • black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 package country gravy mix (2.64 oz)

  • Brown the sausage and do not drain the grease.
    Step 1
    Brown sausage in a large skillet. Remove the sausage and most of the fat. Set the skillet aside to cook your eggs in later.
  • Heat potatoes, Anaheim pepper, and onions in a skillet with hot oil.

    In a large skillet, heat the olive oil. When the oil is hot, combine potatoes with Anaheim pepper and onions. Spread evenly across the bottom of the skillet.
