Ingredients

  • 1 - loaf french bread
  • 8 - eggs
  • 1 cup buttermilk
  • 1/2 teaspoon cinnamon
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 3 ounces package cream cheese
  • 16 ounces bag mixed berries, divided
  • 1/2 cup light karo syrup

How To Make make-ahead berry french toast casserole

  • Step 1
    Cut french bread into 1-inch chunks and place in a large bowl. In a seperate bowl, mix together the eggs through the salt. Pour over the french bread and toss to coat thoroughly. Spray a 13X9 pan with cooking spray. Add half of the bread. Dot with half the cream cheese and 1/4 cup of berries. Add the remaining bread and dot with the remaining cream cheese and 1/4 cup of berries. Refrigerate overnight.
  • Step 2
    For the syrup ~ Put the remaining berries and juices in a heavy-bottomed sauce pan with the corn syrup. Heat to a simmer, stirring constantly. Continue to simmer until the mixture is thickened.
  • Step 3
    Preheat oven to 350 degrees. Bake the casserole for about 30 minutes, until browned on the top and firm in the center. Serve with syrup.
