I made this delicious casserole for my low carb diet...love it. Very flavorful...enjoy!

Ingredients

  • 12 ounces bacon
  • 1 pound pork sausage
  • 1/2 cup diced, onions
  • 1/2 cup diced, green peppers
  • 12 - eggs
  • 1 cup heavy cream
  • 1 - 4 ounces can mushrooms, drained
  • 1 - 8 ounces shredded, cheddar cheese
  • - salt & pepper to taste

How To Make low carb breakfast bake

  • Step 1
    Brown the bacon, sausage, onions, mushrooms and peppers; drain.
  • Step 2
    In a large bowl, beat the eggs. Add cream and salt and pepper, to taste.
  • Step 3
    In a greased 9x13 inch pan, spread the meat mixture. Pour the egg mixture evenly over the top.
  • Step 4
    Top with cheddar cheese. Cover and chill overnight.
  • Step 5
    Bake at 350 degrees F for 50-60 minutes, until golden brown and a knife inserted in the middle comes out clean. NOTE: If not chilled, bake only 40-45 minutes.
