brunch casserole - cassies
I made this colorful breakfast casserole for Christmas and never got it posted...so, hubby requested it again this mornin...it can be refrigerated a day ahead, or baked the same day...enjoy!! My photos

Ingredients
- 8 - eggs
- 2 cups milk
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- 8 slices sandwich bread, torn or cut into 1 inch pieces
- 8 ounces cubed, ham
- 2 cups spinach, water squeezed out well
- 1 - onion, chopped
- 2 - 3 cloves garlic, minced
- 1 - roasted red pepper, diced - i used jarred
- 8 ounces shredded swiss cheese - i used a combination of cheddars
How To Make brunch casserole - cassies

Step 1Preheat oven to 375 degree F...if baking right away, if not baking until the next morning, take out of fridge 30 minutes in advance, before baking.

Step 2In a bowl beat eggs, milk, salt & pepper, set aside.

Step 3Spray a 9 x 13 baking dish with non stick cooking spray or grease with butter. Break bread into pieces and place in bottom of dish.

Step 4Saute onion and garlic ( optional ) I like to cook onion until just translucent. You can put in raw if you like. To casserole, sprinkle with spinach, peppers, onion and garlic.

Step 5Then add ham...toss all ingredients.

Step 6Pour egg mixture evenly over bread mixture. If bread floats, pushed down into egg, so everything is coated.

Step 7Top with cheese...cover with foil and bake for 30 minutes.

Step 8Remove foil and continue baking another 15 - 25 minutes until golden.

Step 9Let sit for 10 minutes before cutting... Enjoy!!
