I made this colorful breakfast casserole for Christmas and never got it posted...so, hubby requested it again this mornin...it can be refrigerated a day ahead, or baked the same day...enjoy!! My photos

Ingredients For brunch casserole - cassies

  • 8
    eggs
  • 2 c
    milk
  • 1 1/2 tsp
    salt
  • 1 tsp
    pepper
  • 8 slice
    sandwich bread, torn or cut into 1 inch pieces
  • 8 oz
    cubed, ham
  • 2 c
    spinach, water squeezed out well
  • 1
    onion, chopped
  • 2 - 3 clove
    garlic, minced
  • 1
    roasted red pepper, diced - i used jarred
  • 8 oz
    shredded swiss cheese - i used a combination of cheddars

    Preheat oven to 375 degree F...if baking right away, if not baking until the next morning, take out of fridge 30 minutes in advance, before baking.

    In a bowl beat eggs, milk, salt & pepper, set aside.

    Spray a 9 x 13 baking dish with non stick cooking spray or grease with butter. Break bread into pieces and place in bottom of dish.

    Saute onion and garlic ( optional ) I like to cook onion until just translucent. You can put in raw if you like. To casserole, sprinkle with spinach, peppers, onion and garlic.

    Then add ham...toss all ingredients.

    Pour egg mixture evenly over bread mixture. If bread floats, pushed down into egg, so everything is coated.

    Top with cheese...cover with foil and bake for 30 minutes.

    Remove foil and continue baking another 15 - 25 minutes until golden.

    Let sit for 10 minutes before cutting... Enjoy!!
