This has been one of the breakfasts served every year up hunting. Sometimes I use sausage or bacon instead of ham, or if I have a little of each breakfast meat I will combine them.

Ingredients
- 3 tablespoons butter
- 3 medium potatoes, peeled and thinly sliced
- 4 - green onions, sliced
- 1/2 - sweet green pepper, diced
- 2 cups ham, diced
- 4 large eggs, beaten
- 4 ounces cheddar cheese, shredded
- - salt and pepper to taste
How To Make farmer's breakfast 1999

Step 1In a frying pan, me.t butter over medium heat. sauté vegetables, ham and seasonings for 3 minutes.

Step 2and cook over low heat until the potatoes are tender about 25 minutes.

Step 3Pour eggs over vegetables. DO NOT STIR. Cover and cook until eggs are set, about 10 minutes.

Step 4Sprinkle with cheese. Heat only until the cheese melts. Cut into wedges and serve.
