This has been one of the breakfasts served every year up hunting. Sometimes I use sausage or bacon instead of ham, or if I have a little of each breakfast meat I will combine them.

3 medium
potatoes, peeled and thinly sliced
green onions, sliced
sweet green pepper, diced
2 c
ham, diced
4 large
eggs, beaten
4 oz
cheddar cheese, shredded
salt and pepper to taste

How to Make Farmer's Breakfast 1999


  • 1In a frying pan, me.t butter over medium heat. sauté vegetables, ham and seasonings for 3 minutes.
  • 2and cook over low heat until the potatoes are tender about 25 minutes.
  • 3Pour eggs over vegetables. DO NOT STIR. Cover and cook until eggs are set, about 10 minutes.
  • 4Sprinkle with cheese. Heat only until the cheese melts. Cut into wedges and serve.
