This has been one of the breakfasts served every year up hunting. Sometimes I use sausage or bacon instead of ham, or if I have a little of each breakfast meat I will combine them.

  • 3 Tbsp
  • 3 medium
    potatoes, peeled and thinly sliced
  • 4
    green onions, sliced
  • 1/2
    sweet green pepper, diced
  • 2 c
    ham, diced
  • 4 large
    eggs, beaten
  • 4 oz
    cheddar cheese, shredded
  • ·
    salt and pepper to taste

How to Make Farmer's Breakfast 1999


  1. In a frying pan, me.t butter over medium heat. sauté vegetables, ham and seasonings for 3 minutes.
  2. and cook over low heat until the potatoes are tender about 25 minutes.
  3. Pour eggs over vegetables. DO NOT STIR. Cover and cook until eggs are set, about 10 minutes.
  4. Sprinkle with cheese. Heat only until the cheese melts. Cut into wedges and serve.
