This has been one of the breakfasts served every year up hunting. Sometimes I use sausage or bacon instead of ham, or if I have a little of each breakfast meat I will combine them.

Ingredients For farmer's breakfast 1999

3 Tbspbutter

3 mdpotatoes, peeled and thinly sliced

4green onions, sliced

1/2sweet green pepper, diced

2 cham, diced
-
4 lgeggs, beaten
-
4 ozcheddar cheese, shredded

salt and pepper to taste
How To Make farmer's breakfast 1999

1In a frying pan, me.t butter over medium heat. sauté vegetables, ham and seasonings for 3 minutes.

2and cook over low heat until the potatoes are tender about 25 minutes.

3Pour eggs over vegetables. DO NOT STIR. Cover and cook until eggs are set, about 10 minutes.

4Sprinkle with cheese. Heat only until the cheese melts. Cut into wedges and serve.
