This has been one of the breakfasts served every year up hunting. Sometimes I use sausage or bacon instead of ham, or if I have a little of each breakfast meat I will combine them.

Ingredients

  • 3 tablespoons butter
  • 3 medium potatoes, peeled and thinly sliced
  • 4 - green onions, sliced
  • 1/2 - sweet green pepper, diced
  • 2 cups ham, diced
  • 4 large eggs, beaten
  • 4 ounces cheddar cheese, shredded
  • - salt and pepper to taste

How To Make farmer's breakfast 1999

  • Step 1
    In a frying pan, me.t butter over medium heat. sauté vegetables, ham and seasonings for 3 minutes.
  • Step 2
    and cook over low heat until the potatoes are tender about 25 minutes.
  • Step 3
    Pour eggs over vegetables. DO NOT STIR. Cover and cook until eggs are set, about 10 minutes.
  • Step 4
    Sprinkle with cheese. Heat only until the cheese melts. Cut into wedges and serve.
