I love a hearty breakfast and this sure fills the plate! I love the ease of preparing this recipe and though I added a few seasonings along with some garlic this recipe comes from the Ninja Cookbook. I also ended up adding some cooked bacon to the top of my Frittata as well. It's easy to personalize this one and add flavors your family loves. Make sure you have a dinner fork for this one. :-)

Ingredients

  • 2 tablespoons oil
  • 1 medium red pepper, chopped
  • 1 small onion, chopped
  • 3 - 3 1/2 cups frozen, diced hash brown potatoes
  • 12 large eggs
  • 1 1/2 teaspoons beau monde seasoning
  • 1 - 2 cloves garlic, minced (optional)
  • 4 - 6 slices black peppered bacon, chopped
  • 3/4 cup milk
  • 1 cup extra sharp cheddar cheese, shredded (3/4 - 1/4)
  • - salt & pepper

How To Make fabulous italian fritatta

  • Step 1
    Cook in Ninja
  • Step 2
    Set Ninja to STOVETOP HIGH and heat the oil. Add your onions, green peppers, and bacon. Cook uncovered 15 minutes or till the veggies are tender, stirring often. (I cooked up a few extra pieces of bacon to crumble on the top.)
  • Step 3
    Stir in your frozen potatoes, cover and cook for 5 to 7 minutes.
  • Step 4
    Once your potatoes have cooked up for a few minutes, whisk together your eggs, 3/4 cup cheese, milk, garlic, beau monde seasoning, salt & pepper in a bowl. Turn your Ninja down to a medium heat and add your mixture to potatoes & veggies. Stir gently and then add remaining 1/4 cup of cheese to the top.
  • Step 5
    Cover and cook 10 - 15 minutes till egg mixture is set.
  • Step 6
    Slice and serve
  • Step 7
    Can serve with some sliced fresh fruit & toast.
