Easy Ham and Cheese Quiche

I got this recipe from my mom, not sure where she found it. I have been making it for my husband, who loves this for dinner and devours any leftovers for breakfast. I recently sent an extra pan of this quiche to his construction buddies at work and I received so many compliments that my husband said a couple of them wanted to steal me away from him, ha!

  • 1 1/2 c
    cubed, cooked ham, very small or finely cubed
  • 1 1/2-2 c
    shredded, sharp cheddar cheese
  • 1/4 c
    finely, chopped onion
  • 3 Tbsp
    finely, chopped green pepper
  • 1 c
    pancake mix or buttermilk pancake mix
  • 1/4 tsp
  • 1/8 tsp
  • 2 c
    milk, i use whole milk
  • 5

  • 1/2-3/4 c
    panko japanese style bread crumbs or crushed corn flakes
  • 1/4 c
    butter, melted

How to Make Easy Ham and Cheese Quiche


  1. Heat oven to 350 degrees.
  2. Grease a 12x8 inch baking dish. I use a glass pyrex one.
  3. Place ham, cheese, onion and green pepper in the bottom of the prepared pan.
  4. In medium bowl, combine pancake mix, salt, pepper, milk and eggs; blend for 3 minutes on medium speed.
  5. Pour over ham mixture.
  6. Sprinkle bread crumbs over egg mixture or crushed corn flakes. I have made it both ways and prefer the bread crumbs.
  7. Drizzle melted butter over bread crumbs.
  8. Bake at 350 degrees for 50-60 minutes or until golden brown. Serve immediately. I usually serve this with rolls and a fresh salad.
