easy ham and cheese quiche

I got this recipe from my mom, not sure where she found it. I have been making it for my husband, who loves this for dinner and devours any leftovers for breakfast. I recently sent an extra pan of this quiche to his construction buddies at work and I received so many compliments that my husband said a couple of them wanted to steal me away from him, ha!

Ingredients

  • 1 1/2 cups cubed, cooked ham, very small or finely cubed
  • 1 1/2-2 cups shredded, sharp cheddar cheese
  • 1/4 cup finely, chopped onion
  • 3 tablespoons finely, chopped green pepper
  • 1 cup pancake mix or buttermilk pancake mix
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups milk, i use whole milk
  • 5 - eggs
  • TOPPING
  • 1/2-3/4 cup panko japanese style bread crumbs or crushed corn flakes
  • 1/4 cup butter, melted

How To Make easy ham and cheese quiche

  • Step 1
    Heat oven to 350 degrees.
  • Step 2
    Grease a 12x8 inch baking dish. I use a glass pyrex one.
  • Step 3
    Place ham, cheese, onion and green pepper in the bottom of the prepared pan.
  • Step 4
    In medium bowl, combine pancake mix, salt, pepper, milk and eggs; blend for 3 minutes on medium speed.
  • Step 5
    Pour over ham mixture.
  • Step 6
    Sprinkle bread crumbs over egg mixture or crushed corn flakes. I have made it both ways and prefer the bread crumbs.
  • Step 7
    Drizzle melted butter over bread crumbs.
  • Step 8
    Bake at 350 degrees for 50-60 minutes or until golden brown. Serve immediately. I usually serve this with rolls and a fresh salad.
