~ make ahead ~ ham & swiss breakfast sandwiches ~

Another delicious way to use up some of that leftover ham from Easter. Just make it the night before and stick it in the oven when you rise. Thirty minutes later you have a delicious breakfast sandwich. If you don't like Swiss Cheese, use your favorite, have used cheddar before. Enjoy!

Ingredients

  • 8 slices bread with crust removed
  • butter - softened, enough to spread 8 slices of bread
  • 2 cups chopped cooked ham
  • 1 1/4 cups shredded swiss cheese or cheddar
  • 1 teaspoon mustard
  • 1 1/2 tablespoons dried onion flakes or saute some fresh
  • 1/2 teaspoon each - salt & pepper
  • 1 teaspoon dried parsley
  • 3 - eggs
  • 1 2/3 cups milk

How To Make ~ make ahead ~ ham & swiss breakfast sandwiches ~

  • Step 1
    In an 8 inch greased baking dish or pan, place 4 slices ( crust removed ) bread, butter side up. Sprinkle evenly with chopped ham.
  • Step 2
    Place the 4 remaining slices of buttered bread, over each ham topped bread. Butter side up. Sprinkle evenly with cheese.
  • Step 3
    In a medium bowl, Mix remaining ingredients until well blended. Pour the egg mixture evenly over the bread. Cover & refrigerate overnight or 6 - 8 hours. Remove from refrigerator 10 minutes before baking.
  • Step 4
    Bake in preheated 325 degree oven, for 35 - 45 minutes or until set and cooked through. Cut the 4 sandwiches apart and serve hot or cold.
