Ingredients

  • 1 Tbsp
    extra-virgin olive oil
  • 1 small
    onion, thinly sliced
  • 1 lb
    sweet potatoes, (about 2 medium), peeled and coarsely grated
  • 1/4 tsp
    sea salt
  • 2/3 c
    finely diced black forest ham, (4 ounces)
  • 1/2 tsp
    thyme

How to Make Diabetic Sweet Potato Hash with Black Forest Ham

Step-by-Step

  1. Heat the oil in a large non stick skillet over medium high heat
  2. Add onion
  3. Saute, stirring often, until softened and lightly browned, 3 to 4 minutes.
  4. Turn the burner down to medium heat
  5. Add sweet potatoes and salt.
  6. Saute, stirring often, until the potatoes are tender, 4 to 5 minutes.
  7. Stir in ham and thyme;
  8. Saute, stirring, until the ham is heated through, about 1 minute more.
  9. Serve
