crock pot hash brown breakfast casserole
I made this when all my family was home for the holidays, we have 5 sons and 4 grandbabies and wives and girlfriends :) just added some toast and was a filling and perfectly flavored breakfast, you can sub the sun dried tomatoes for reg. tomatoes but I wouldn't recommend it, the flavor from the sun dried tomatoes must makes this! I let it cook over night so it was ready in the morning, just perfect!

Ingredients
- 1 package 36-32 oz. frozen shredded has brown potatoes
- 1 package jimmy den hearty original sausage crubles
- 2 cups shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
- 1/2 cup julienne cut sun dried tomatoes packed in oild, drained
- 6 - green onions, sliced
- 12 - eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper

Step 1SPRAY A 6 QT. SLOW COOKER WITH COOKING SPRAY. LAYER 1/2 THE POTATOES ON THE BOTTOM OF THE SLOW COOKER.

Step 2TOP WITH HALF OF THE SAUSAGE, MOZZARELLA AND PARMESAN CHEESE, SUN DRIED TOMATOES AND GREEN ONION, REPEAT LAYERING.

Step 3BEAT EGGS, MILK SALT AND PEPPER IN A LARGE BOWL WITH A FORK OR WHISK UNTIL WELL BLENDED.

Step 4POUR EVENLY OVER POTATOE-SAUSAGE MIXTURE.
