I made this when all my family was home for the holidays, we have 5 sons and 4 grandbabies and wives and girlfriends :) just added some toast and was a filling and perfectly flavored breakfast, you can sub the sun dried tomatoes for reg. tomatoes but I wouldn't recommend it, the flavor from the sun dried tomatoes must makes this! I let it cook over night so it was ready in the morning, just perfect!

Ingredients

36-32 oz. frozen shredded has brown potatoes
1 pkg
jimmy den hearty original sausage crubles
2 c
shredded mozzarella cheese
1/2 c
shredded parmesan cheese
1/2 c
julienne cut sun dried tomatoes packed in oild, drained

Step-by-Step

  • 1SPRAY A 6 QT. SLOW COOKER WITH COOKING SPRAY. LAYER 1/2 THE POTATOES ON THE BOTTOM OF THE SLOW COOKER.
  • 2TOP WITH HALF OF THE SAUSAGE, MOZZARELLA AND PARMESAN CHEESE, SUN DRIED TOMATOES AND GREEN ONION, REPEAT LAYERING.
  • 3BEAT EGGS, MILK SALT AND PEPPER IN A LARGE BOWL WITH A FORK OR WHISK UNTIL WELL BLENDED.
  • 4POUR EVENLY OVER POTATOE-SAUSAGE MIXTURE.
