Ingredients
- 1/2 pound breakfast sausage
- 1 cup frozen hash browns
- 1/2 can rotel tomatoes with green chiles
- 1 cup milk
- 4 - eggs, beaten
- 1 cup biscuit mix
- 1/4 cup diced onion
- 1 cup cheddar cheese, shredded
- - paprika
How To Make breakfast casserole

Step 1Brown sausage in a skillet, crumbling as it cooks. Remove from heat.

Step 2Microwave hash browns on high for 3 minutes. Add potatoes and tomatoes to the sausage. Set aside.

Step 3In a bowl, combine eggs, milk and biscuit mix.

Step 4In a 9 x 13 inch baking dish, spread sausage mixture on the bottom.

Step 5Sprinkle the onion on top of sausage. Sprinkle half the cheese over that.

Step 6Carefully pour the egg mixture over the sausage mixture. Sprinkle the remaining cheese over the egg mixture. Sprinkle lightly with paprika.

Step 7Bake at 400 degees for 25 minutes or until done. OLet stand 5 minutes.

Step 8Cut into squares and serve.
