This is my husband Mike's recipe.

Ingredients

  • 1/2 pound breakfast sausage
  • 1 cup frozen hash browns
  • 1/2 can rotel tomatoes with green chiles
  • 1 cup milk
  • 4 - eggs, beaten
  • 1 cup biscuit mix
  • 1/4 cup diced onion
  • 1 cup cheddar cheese, shredded
  • - paprika

How To Make breakfast casserole

  • Step 1
    Brown sausage in a skillet, crumbling as it cooks. Remove from heat.
  • Step 2
    Microwave hash browns on high for 3 minutes. Add potatoes and tomatoes to the sausage. Set aside.
  • Step 3
    In a bowl, combine eggs, milk and biscuit mix.
  • Step 4
    In a 9 x 13 inch baking dish, spread sausage mixture on the bottom.
  • Step 5
    Sprinkle the onion on top of sausage. Sprinkle half the cheese over that.
  • Step 6
    Carefully pour the egg mixture over the sausage mixture. Sprinkle the remaining cheese over the egg mixture. Sprinkle lightly with paprika.
  • Step 7
    Bake at 400 degees for 25 minutes or until done. OLet stand 5 minutes.
  • Step 8
    Cut into squares and serve.
