another great brunch casserole

I just love this type of breakfast / brunch casserole...they are great for taking to Church...hearty and flavorful, what's not to love?...I love having the leftovers to pop in the microwave as well...enjoy! My photos.

Ingredients

  • 24 ounces bulk pork sausage - i used bob evans
  • 1/2 - 3/4 cups onion, chopped
  • 1/2 cup each, red and green bell pepper, chopped
  • 2 cups shredded cheddar cheese
  • 3 cups frozen hash browns
  • 1 cup biscuit mix
  • 4 - eggs
  • 2 cups milk
  • 1/2 - 1 teaspoons fresh ground pepper
  • 1/2 - 1 teaspoons salt
  • 1/2 teaspoon red pepper flakes - optional

How To Make another great brunch casserole

  • Step 1
    Preheat oven to 400 degree F. Grease a 9 x 13 baking dish.
  • Step 2
    In a large skillet, brown sausage, peppers and onions, until sausage is no longer pink. Drain
  • Step 3
    In a medium sized bowl; mix sausage mixture, 1 1/2 cup cheddar and hash browns.
  • Step 4
    Pour this mixture into prepared baking dish. Spread out evenly. In same bowl, add Bisquick, milk, eggs, salt, pepper, hot pepper flakes. Whisk until blended.
  • Step 5
    Pour evenly over sausage mixture.
  • Step 6
    Bake for 40 to 45 minutes or until a knife inserted in the center comes out clean.
  • Step 7
    Sprinkle remaining cheese evenly on top and place back in oven until cheese is melted.
  • Step 8
    Cool for roughly 5 minutes before cutting. Enjoy this yummy casserole.
