INGREDIENTS

1 tablespoon of olive oil

1 small yellow onion, chopped

1 – 8 ounce package of mushrooms, either sliced or quartered
•
10 large eggs
•
1/2 cup milk
•
1 1/2 cup of cottage cheese
•
6 green onions, chopped
•
1 teaspoon kosher salt
•
fresh ground pepper to taste
•
non-stick cooking spray
•
1 package of frozen hash brown potatoes, not thawed (my package was 28 ounces)
•
3 cups of raw broccoli, chopped into small florets
•
8 ounces of diced ham or Canadian bacon. Sub cooked sausage or bacon if you prefer!

1 1/2 cups of shredded gruyere cheese
•
1/4 cup of parmesan or romano cheese
•
creme fraiche to garnish
