This version is different from the zucchini bread (which I personally prefer) in that it not only has nuts, but also lemon.

Ingredients

  • 2 cups zucchini, grated and unpeeled
  • 3 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 teaspoon baking powder
  • 4 - eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 cup chopped nuts
  • 2 teaspoons grated lemon rind

How To Make zucchini walnut bread, mom

  • Step 1
    Prepare zucchini and set aside. Sift flour, cinnamon, soda, salt and powder. Beat eggs and sugar. Blend into dry ingredients alternately with zucchini. Add nuts and lemon. You can substitute 2 tsp lemon juice for the rind if you do not have a lemon. Turn into 2 greased and floured bread pans and bake 55 min at 350 degrees. Cool 10 min and remove from pan to cool completely on wire rack.
