This version is different from the zucchini bread (which I personally prefer) in that it not only has nuts, but also lemon.

2 czucchini, grated and unpeeled

3 cflour

1 tspcinnamon

1 tspbaking soda

1 tspsalt

3/4 tspbaking powder

4eggs

2 csugar

1 coil

1 cchopped nuts

2 tspgrated lemon rind
How To Make zucchini walnut bread, mom

1Prepare zucchini and set aside. Sift flour, cinnamon, soda, salt and powder. Beat eggs and sugar. Blend into dry ingredients alternately with zucchini. Add nuts and lemon. You can substitute 2 tsp lemon juice for the rind if you do not have a lemon. Turn into 2 greased and floured bread pans and bake 55 min at 350 degrees. Cool 10 min and remove from pan to cool completely on wire rack.
