Ingredients
- 2 cups zucchini, grated and unpeeled
- 3 cups flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 teaspoon baking powder
- 4 - eggs
- 2 cups sugar
- 1 cup oil
- 1 cup chopped nuts
- 2 teaspoons grated lemon rind
How To Make zucchini walnut bread, mom

Step 1Prepare zucchini and set aside. Sift flour, cinnamon, soda, salt and powder. Beat eggs and sugar. Blend into dry ingredients alternately with zucchini. Add nuts and lemon. You can substitute 2 tsp lemon juice for the rind if you do not have a lemon. Turn into 2 greased and floured bread pans and bake 55 min at 350 degrees. Cool 10 min and remove from pan to cool completely on wire rack.
